Luxurious Pasta With White Sauce

Do you love to eat good food but don’t always like to make a fuss? This is one of the easiest luxurious pasta recipes you’ll ever make.

It’s actually one my go-to “holy crap, look at the time!” recipes for when I forget or don’t feel like making dinner.

Every time we eat it, we feel so decadent! It’s like eating at a swanky 5 star restaurant but with comfort food you can make quickly and easily at home. In your pjs of course.

Plus, it’s kid-approved! It’s also vegan/plant-based and oil-free. You can also make it gluten-free by subbing your favourite pasta.

In the words of my three year old, “Wow. Wow. WOW! This is just delicious! WOW!”

Luxurious Pasta With White Sauce

So I probably could have come up with a better name for it but this is how we refer to it at home.

Ingredients

  • 1/2 raw cashews (sub hemp hearts)
  • Your favourite pasta (we like to use macaroni) – make enough for the fam (4 people)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups of organic* canned diced roasted tomatoes (or 3 cups garden fresh)
  • A ton of organic* spinach. Load it up! 3+ cups. Tear or chop it if you have littles with “not long throats” as my kid says
  • Basil – 1/2-1 cup chopped garden fresh or 3 drops Basil+ essential oil
  • 2 drops Oregano+ essential oil or 1 tsp dried
  • Real Salt + pepper to taste

    *always use organic. These fall in the top 10 produce for pesticide and toxin residue.

Directions

  1. Soak cashews in boiling hot water.
    20 mins if using a high-speed blender.
    2 hrs or overnight if using a regular blender.
  2. Cook the pasta in salted water – following the directions on the box. Or not. Go ahead and live dangerously! *watches pot boil over AGAIN*
  3. Using a wok or large sauce pan, add a bit of water to the pan. Heat over medium heat. Add onion and garlic. Sauté until translucent. Add more water, as necessary, so the food doesn’t stick or burn. This is how you can cook oil-free!
  4. Add diced tomatoes and spinach. Continue cooking over medium-high heat until spinach is wilted.
  5. Drain cashews and add them to blender with 1/2-3/4 cup of water. Blend until smooth.
  6. Add cashew sauce to wok. Add basil, oregano, salt + pepper. Stir together and cook until heated through.
  7. Drain and add cooked pasta. Stir together. Adjust salt + pepper, as necessary.
  8. Enjoy!

Onion Tip

Leave an open bottle of Clove essential oil or Thieves on your cutting board while you chop onions. You won’t cry!

Alternative: put the onion in the fridge for a few hours to chill before cutting.
